Similar to Camembert, but thinner so more surface area for the beautiful white rind which ages the cheese a little faster than Camembert. 
Do you find the brie from the grocery store a little bland and lacking flavour? These cheeses have character! Great taste without being "goat-y" This cheese is more typical in what one would find in the south of France rather than Ontario. A delicate, edible white bloomy rind on the outside, firm to creamy on the inside. The older the cheese, the creamier and more flavourful it will be.
